Super tasty smoky beans on baked potato…simple but effective…what more can I say!?

Ingredients

4 baked potatoes
Olive oil
2 rashers of smoky bacon, chopped up small
1 onion, finely chopped
1 tsp smoked paprika
Squeeze of Bbq sauce
2 Tins of baked beans
100g Cheddar cheese

Method…

  1. Set the oven to 200°C / 180°C fan oven / 400°F / gas mark 6.
  2. Wash the potatoes, rub all over with olive oil and sprinkle with salt and pepper…
  3. Cook on the grates of the oven for up to 1.5 hours. They will be crispy but give when squeezed.
  4. Meanwhile, add a glug of olive oil to a frying-pan and start to fry off bacon…
  5. Once starting to brown add your onion and fry for a few minutes…
  6. Add the paprika and fry off for a further minute…
  7. Add your beans, a squeeze of bbq sauce and simmer away for 5 mins…
  8. Cut the potatoes in half, spoon the baked beans over them and sprinkle the cheese on top. Enjoy hot.

Potential additions

  • Swap the bacon for chorizo
  • Add some smoky cheese to the bean mixture
  • Alternatively, ofcourse, serve these beans on toast!
  • Add a large dash of Worcestershire sauce
