Store brought tomato sauces are often high in price compared to a can of tomatoes when quite often there is not much difference. Store brought pasta sauces can also be high in sodium.

Ingredients…

  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, finely sliced
  • 2 x tins plum tomatoes
  • 2 tbsp balsamic vinegar
  • Squeeze of tomato ketchup
  • 1 small bunch basil

Method…

  • Put a sauce pan on a medium to low heat then add you oil followed by the onion. You want it to cook for 5 or so minutes until starting to take colour…
  • Add your garlic for a couple of minutes, then add your tinned tomatoes, vinegar, ketchup and a good sprinkle of salt and pepper…
  • Break up the tomatoes with a wooden spoon, give it a good stir and let blip away for 15-20 mins…
  • Tear in the basil leaves and give it another good stir…
  • Serve over cooked pasta and cover with as much cheese as you like…

Additions…

  • Change up your pasta shapes and sizes..
  • Try different cheeses at different stages of making the sauce…
  • Add olives or chillies to the tomato sauce…
  • Fry off some chorizo, pepperoni or bacon at the start for a meaty, smoky kick…
