Its that season again when anyone who loves growing veg is probably growing and has lots of fresh tomatoes!

I am no chef, however I do eat alot of food and I try to eat the best food I can. This recipe is so simple, I would hardly even call it a recipe but its so tasty!…its also a great way to use up fresh tomatoes.

For the purposes of this recipe I have used some fairly good brown bread, but you could put these tomatoes on anything…brown bread, white bread, pitta, pizza base, even a naan bread. The naan bread version I made was very good actually.

You are going to want to toast what ever bready/carby item you choose to your desired toasty level. Then go ahead and slice a clove of garlic in half and rub it over the toast. A couple of rubs if you are not too into garlic because it can be quite strong, I tend to rub the whole thing in and it melts into the toast…can be a but garlic spicy though. Then slice slice your tomato in half and grate it. You want to grate the flesh right out o the tomato so you have just the skin left in your hand…sounds a bit messy but very easy. I would use one whole tomato per slice of bread as a rough ratio.

Then to finish you can put a range of different things on top. I tend to just go sprinkle of salt and pepper and a swig of olive oil but you can go basil, coriander, flecks of cheddar or feta, a small grate of parmesan…do as you feel…

This recipe is almost store cupboard

With 4 or 5 main ingredients, this is my go to recipe for not only fresh tomatoes but a light snack, quick breakfast or a ‘use ups’ dish.

Ingredients…

Serves 1

  • 1 slice of toast
  • 1 large ripe tomato or 2 small ones – what ever you have!
  • 1/2 garlic clove
  • salt and pepper
  • Extra virgin olive oil

Method…

  1. Toast your bread of choice…
  2. Peel the garlic clove and scrape the surface of the bread, once toasted with the garlic clove. The more you scrape the stronger the garlic burn. I quite like alot!
  3. Halve your tomato and grate over the top of your bread with a box grater until you only have the skin left…
  4. Season, swish some olive oil over and serve up!

Additions…

Now with this recipe when it comes to additions you can almost go with your gut…or your fridge…what ever comes first!

  • Basil or coriander torn over the top…
  • Sprinkle of balsamic or cider vinegar on the tomatoes…
  • Mozzarella or some good cheese under or over the tomatoes…
  • Some smashed up crispy bacon…
