Budget_Baked_Bean_Chilli

A super healthy, super tasty budget meal that delivers all the warmth of comfort food! A great winter dish if you are reading when published. Give it a go!

  • 2 medium onions, finely chopped
  • 2 cloves garlic, minced or finely chopped
  • 1 large sweet potato, peeled and diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2 cans baked beans
  • 1 can black beans, drained and rinsed
  • 1 can tinned tomatoes
  • 400ml stock (which ever your prefer)

Method…

  1. In a large pot sauté the chopped onions and minced garlic until softened.
  2. Add the sweet potato cubes to the pot and cook for about 5 minutes, allowing them to start softening.
  3. Stir in chili powder, cumin and smoked paprika. Season to perfection with salt and pepper and then add tomato paste and mix well.
  4. Pour in the baked beans, black beans, tinned tomatoes. Mix until all ingredients are combined.
  5. Add your stock and bring to a simmer. Cook for 35-45 mins until the potaotes are very tender and the chilli is getting nice and thick.
  6. You can mash the chilli here a little to break up some of the beans and potato and have it thicken slightly.
  7. Serve on rice or potato or nachos…however you wish!
