When apple season falls upon us again we all need a ‘go to’ set of apple recipes and this one is a good one! Its an easy, tasty, almost store cupboard recipe that cant really go wrong, and if you serve it with anything creamy..ice cream, clotted cream, a dribble of double cream…you have yourself a lovely pudding to serve at any occasion.
I am slowly building up my repertoire of apple recipes. The apple is so verstaile and there are so many ways to cook and eat but if your a beginner like me and want to bring people together thorugh the power of food…this is a good place to start.
This recipe is relatively new in my world. I grew up with apple pies and my mum always made a really good, classic apple crumble, but this apple crisp recipe is something slightly different. My biggest critics – my two kiddies – love this recipe!
What Apples to use?
When it comes to your choice of apples, I always think its what ever good apples you can get your hands on. The fresher the better. I also think its good to try different apples and find the one which works for you. I like quite a bitter, crispy apple so with recipe have gone a bit more traditional with my choice of Bramleys, but if you cant get Bramleys, Granny Smith are a great apple for this recipe keeping their bite and texture. What sugar to use?
When it comes to your choice of sugar you can almost use what you have. You can use your normal white granulated sugar, caster, light brown, dark brown, demerara or muscovado. The darker the sugar the richer, more intense a sugar hit you will get so its under your control.
This recipe is 90% store cupboard
For the filling…
500g apples, peeled and sliced
50g sugar
1 tsp cinnamon
Juice of half a lemon
For the topping…
100g old fashioned oats
100g plain flour
100g sugar
1 tsp cinnamon
70g cold, unsalted butter
pinch of slat
Method…
Pre heat the oven to 190 and lightly grease a 20cm baking dish
For the filling, in a bowl mix your apples, sugar, 1 tsp cinnamon and lemon juice until well combined and spread out on the bottom of your prepared baking dish.
For the topping, in a separate mixing bowl add the oats, flour, butter, sugar, cinnamon, butter and salt. You want to work the mixture to a combined consistency. From my experience, its not a bad thing if you have clumps, you just want the butter touching everything.
Put this dry mix over your apples, level out and pop into the oven until deliious. Somewhere aound 45-50 minutes.
