A super healthy, super tasty budget meal that delivers all the warmth of comfort food! A great winter dish if you are reading when published. Give it a go!
- 2 medium onions, finely chopped
- 2 cloves garlic, minced or finely chopped
- 1 large sweet potato, peeled and diced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 2 tablespoons tomato paste
- 2 cans baked beans
- 1 can black beans, drained and rinsed
- 1 can tinned tomatoes
- 400ml stock (which ever your prefer)
Method…
- In a large pot sauté the chopped onions and minced garlic until softened.
- Add the sweet potato cubes to the pot and cook for about 5 minutes, allowing them to start softening.
- Stir in chili powder, cumin and smoked paprika. Season to perfection with salt and pepper and then add tomato paste and mix well.
- Pour in the baked beans, black beans, tinned tomatoes. Mix until all ingredients are combined.
- Add your stock and bring to a simmer. Cook for 35-45 mins until the potaotes are very tender and the chilli is getting nice and thick.
- You can mash the chilli here a little to break up some of the beans and potato and have it thicken slightly.
- Serve on rice or potato or nachos…however you wish!
