So this is my first attempt, and most definitely not my last, of beer can chicken!

This is one of those things which you read about but never quite believe…how juicy the chicken is…how it steams the meat from the inside whilst keeping the outside of the chicken smoky and crispy. Well I can tell you…even for a beginner like me…it works!

Beer can chicken is the process of cooking a chicken on a half full beer can. In this case, I used my classic bbq rub and cooked it on the kettle bbq over wood and lumpwood. My first time cooking over wood – and the results were great! Aiming for internal temp of 165 it took around 1hr 10 minutes. Will definately try this again – a great summer recipe i think!

BBQ Spice Rub Blend…

2tbsp brown sugar
2tbsp paprika
2tsp garlic powder
1tsp mustard powder
2tsp onuon powder
1tsp salt
1tsp pepper

add 2tsp chilli powder if you like it spicy and its not for the kids…

Method…

You want to set up your BBQ so you can create a heat source on one half and have your chicken on the beer can, on a level surface, safely on the other.

I create a pile of coals from a combination of lumpwood and wood. You can adjust the heat the chicken is getting by a combination of moving the chicken towards the coals and further away from to achieve the perfect cook.

You are going for an internal temp of 165F on the thickest part of the chicken. You also want to make sure that every corner and edge of the chicken gets the heat and is cooked all the way through! It took me about 1hr10mins for a medium sized chicken.
