People rave about smash burgers and I can see why. Aside from being really good and completely delivering that burger fix, they are so easy! You dont even need to make them on the bbq!…but a lick of smoke is good for anything!

To make your burgers, you will need a cast iron griddle plate…you cant be smashing beef mince down on the bars of the bbq…it just doesn’t work…the smash burgers need to sit and crisp in their own fat and juices…hence the high fat content meat! A little oil on the griddle pan is also a good idea!

Ingredients…

  • 500g beef with at least 20% fat
  • Salt and Pepper

To serve…

  • Mayonnaise
  • Ketchup
  • Gherkins and a swig of their juice
  • American cheese
  • Lettuce – shredded
  • Burger buns – smaller rather than bigger

Method…

  • Cup about 100g of the mince in your hands and throw straight onto the pre-heated griddle plate…
  • Squash down to your desired thickness! If you want it nice and thin, really give it a squash, it might cook a bit quicker and will give you more crisp!
  • Let it sit there, cooking and crisping in its own juices, give it a good sprinkle of salt and pepper if u fancy and then flip it over…
  • After a couple of minutes crisping and browning, lay some good American cheese over the burger and either put the bbq lid down or put a cloche over the burger…
  • Once the cheese has melted, serve up with a saucy mixture made from mayo, ketchup and a tiny swig of pickle juice and assemble with all other ingredients!
