Ingredients…
- About 5 cups of water
- About 3/4 cup of sugar
- 5 lemons
- Lots of ice

Method…
- On low, heat through about a cup of water and about 3/4 of a cup of white sugar until it fully dissolves. You are making a simple sugar syrup.
- Shave a few bits of lemon zest with a peeler into your sugar syrup and let it sit until cool.
- Let the zest infuse for at least an hour.
- Juice 4 lemons – you want roughly the same amount of lemon juice to sugar ratio.
- Everything from now on is personal preference…
- Mix the sugar syrup, lemon juice, water and ice to what ever ratios you want into a large jug. I used all the sugar syrup, all of the lemon juice, 4 cups of water, lots of ice and sliced up another lemon for good measure.

Iv used cup measurements here, only really because it was easier to grab a standard builders mug and measure everything from that. No fixed measurements here.
You only need to make a sugar syrup so the sugar doesn’t fall to the bottom.
