Sponge mix –
- 200g butter
- 200g sugar
- Zest of 1 orange
- Zest of 3 clementines
- Juice of 2 clementines
- 2 eggs
- 200g self raising flour
Drizzle mix –
- Juice of 3 clementines
- Juice of 1 lemon
- 3 tbsp icing sugar

- Fold in flour and combine until smooth. Pour into a prepared loaf tin…
- Bake in the pre-heated oven for about 45 mins to 1hr, or until golden brown and shrinking away from the sides of the tin…
- Once the cake is done, prick the cake all over with a skewer and then mix together your drizzle mix ingredients until smooth and pour over the warm cake…
- Leave to cool a little and loosen the sides of the cake, then lift the cake out of the tin. Slice to serve.
