We all love a classic lemon drizzle, so why not go super seasonal and do a clementine drizzle!?

Ingredients…

Sponge mix –

  • 200g butter
  • 200g sugar
  • Zest of 1 orange
  • Zest of 3 clementines
  • Juice of 2 clementines
  • 2 eggs
  • 200g self raising flour

Drizzle mix –

  • Juice of 3 clementines
  • Juice of 1 lemon
  • 3 tbsp icing sugar

Method…

  • Preheat the oven to 180C/160C Fan/Gas Mark 4…
  • Cream butter and sugar until pale and fluffy…
  • Add zests, clementine juice and 2 beaten eggs and mix…
  • Fold in flour and combine until smooth. Pour into a prepared loaf tin…
  • Bake in the pre-heated oven for about 45 mins to 1hr, or until golden brown and shrinking away from the sides of the tin…
  • Once the cake is done, prick the cake all over with a skewer and then mix together your drizzle mix ingredients until smooth and pour over the warm cake…
  • Leave to cool a little and loosen the sides of the cake, then lift the cake out of the tin. Slice to serve.
