A completely classic, cheap, vegetarian dish…super easy and super healthy!

Ingredients…
- 1 onion, chopped
- 3 garlic cloves
- 1 thumb size piece of ginger, grated
- 1 red or green chilli
- 1 tbsp vegetable oil
- 1/2 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Turmeric
- 1/2 tsp Cinnamon
- 400g new potatoes cut in half or 2cm cubes
- 400g tin plum tomatoes
- 400g tin chickpeas
- 100g fresh spinach

Method…
- Put your onion, chilli, ginger and garlic in a food processor and whizz to a fine chop. Put the oil in a frying pan on medium and add your onion mixture…
- Cook on medium until starting to reduce and turn golden…
- Add your spices, give it a stir, then add your potatoes and give it another stir to coat. Cook off for a couple of minutes…
- Add your tomatoes crushing them through your hands as you do…
- Add your chickpeas and a cans worth of water…
- Simmer for 30 minutes or util potato is cooked though and the sauce has thickened…
- Add your spinach and let wilt for a couple of minutes…
- Serve up with rice or naans…

Additions and Alterations…
- Adding the juice of half a lemon and 2 tsp gara masala to the final curry will add a deep and interesting flavour.
- Chopped up coriander in the final curry is delicious.
- A stock cube disolved into hot water added when you add your chickpeas…
- A tbsp of your favourite curry paste…
