These store cupboard nachos are my favorite baked bean dish of all time! Myself and my other half had these for dinner on a Saturday night for years! These nachos aren’t only dam tasty, they’re super cheap and not too bad on the waist line…definitely give them a try!
Ingredients…
- Olive oil
- 1 onion, finely sliced
- 1/2tsp dried oregano
- 1/2tsp garlic granules
- 400g tin of plum tomatoes
- Squeeze of ketchup
- 1/2tsp smoked paprika
- 1/2tsp dried mixed herbs
- 1 tin of baked beans
- squeeze of bbq sauce
- Sour cream and chive dip
- Cheddar cheese
- Pre-grated mozerella cheese
- pickled jalapeños

To make your salsa…
- Get a frying pan on a medium heat, and add a glug of olive oil followed by half the onion…
- Sweat off for around 5 minutes then add your oregano and garlic granules and cook off for another minute…
- Add your tin of plum tomatoes and crush them through your hands as they go in, alternatively you can crush up with a fork…
- Add a squeeze of ketchup and simmer for around 5-10 minutes…
To make your beans…
- Get a frying pan on a medium heat, and add a glug of olive oil followed by half the onion…
- Sweat off for around 5 minutes then add your smoked paprika and mixed herbs and cook off for another minute…
- Add your tin of beans, a squeeze of bbq sauce and simmer for around 5 minutes until slightly thickened…
Assemble your nachos…
- get your oven on 190C…
- put 4 wraps straight onto the bars of the oven and bake for 8-10 mins so they go nice and crispy…
- Meanwhile, get 2, oven safe plates and dot around your bean and tomato mixture onto them…
- take your sourcream dip and put 4-5 tsps on each plate filling any holes where there is no bean or tomato mixture…
- sprinkle over your cheeses and top with jalapenos…
- bake for around 10-12 minutes until bubbly and delicious…
- be careful…that plate will be hot and so will the nachos, leave to cool for 5 mins before eating…
