Ingredients…
250g lamb mince
1 onion, finely chopped
1 stick celery, finely chopped
1 carrots, finely chopped
2 Garlic cloves finely chopped
1 tsp dried thyme
400g tinned plum tomatoes
200ml beef or lamb stock
2 tins of cheap baked beans
3 tbsp Worcestershire sauce
500g white potatoes, peeled and chopped
500g sweet potatoes, peeled and chopped
Salt and pepper
50g butter
100ml milk

Method…
Add the lamb mince to a large casserole pan and fry off until brown with no pink bits. Remove the meat from the pan and set aside, leaving the fat in the pan, drain if desired…
Add onion, celery and carrot to the pan and cook over a medium to high heat for 5 minutes…
Add the garlic and thyme for 1 minute…
Add back your mince to the pan and then add your tomatoes, stock, baked beans and Worcestershire sauce, breaking up the tomatoes a little bit as you do…
Cover and a simmer for around 30 mins, uncovering half way…
Get a big pan of salted cold water on, put your potatoes in and bring to the boil, cook for 16-18 minutes….
Drain your potatoes for 5 minutes then mash with the butter, milk, salt and pepper…
Decant your mince mixture into a large, flat oven proof dish, top with the potato mixture…
Place dish into a preheated oven at 190C for 20-25 mins, until bubbly and delicious…

Potential additions…
- Herbs would be great to add to this recipe! Things like bay leaf, rosemary or thyme would add great flavour…
- You could also grate almost any cheese ontop for a delicious cheesy hit…
