Super tasty smoky beans on baked potato…simple but effective…what more can I say!?

Ingredients…
4 baked potatoes
Olive oil
2 rashers of smoky bacon, chopped up small
1 onion, finely chopped
1 tsp smoked paprika
Squeeze of Bbq sauce
2 Tins of baked beans
100g Cheddar cheese

Method…
- Set the oven to 200°C / 180°C fan oven / 400°F / gas mark 6.
- Wash the potatoes, rub all over with olive oil and sprinkle with salt and pepper…
- Cook on the grates of the oven for up to 1.5 hours. They will be crispy but give when squeezed.
- Meanwhile, add a glug of olive oil to a frying-pan and start to fry off bacon…
- Once starting to brown add your onion and fry for a few minutes…
- Add the paprika and fry off for a further minute…
- Add your beans, a squeeze of bbq sauce and simmer away for 5 mins…
- Cut the potatoes in half, spoon the baked beans over them and sprinkle the cheese on top. Enjoy hot.

Potential additions…
- Swap the bacon for chorizo
- Add some smoky cheese to the bean mixture
- Alternatively, ofcourse, serve these beans on toast!
- Add a large dash of Worcestershire sauce
