Ingredients…
- 2 tbsp olive oil
- 1 onion, diced
- 1 tsp ground coriander
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp mild curry powder
- 4 garlic cloves, finely grated
- 1 thumb sized piece of ginger, finely grated
- 200g red lentils
- 400ml vegetable stock
- 400ml coconut milk
- 1 can plum tomatoes, crushed or blended
- Squeeze of ketchup
- Salt and pepper to taste
- Juice of half a lime
- Handful of coriander finely chopped
To serve…
- Natural yogurt
- Fresh lime juice
- A simple pickle of cucumber and onion finely chopped with a sprinkle of salt and vinegar
- Rice and naans

Method…
- Add your olive oil to a medium sized pan then add your diced onion and fry for 5 minutes until soft…
- Add all your spices and fry for 2 minutes…
- Add your ginger and garlic and fry for another 2 minutes…
- Add your lentils, stock, coconut milk, tomatoes and ketchup and cook on medium/low for 30 minutes or until lentils are cooked to your liking…
- Add juice of half a lime, coriander and season to perfection…
- Serve with what you like most and enjoy
