Lentil curry is a tasty, healthy store-cupboard dinner which can be thrown together pretty easily! Give it a try…

Ingredients…

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp mild curry powder
  • 4 garlic cloves, finely grated
  • 1 thumb sized piece of ginger, finely grated
  • 200g red lentils
  • 400ml vegetable stock
  • 400ml coconut milk
  • 1 can plum tomatoes, crushed or blended
  • Squeeze of ketchup
  • Salt and pepper to taste
  • Juice of half a lime
  • Handful of coriander finely chopped

To serve…

  • Natural yogurt
  • Fresh lime juice
  • A simple pickle of cucumber and onion finely chopped with a sprinkle of salt and vinegar
  • Rice and naans

Method…

  • Add your olive oil to a medium sized pan then add your diced onion and fry for 5 minutes until soft…
  • Add all your spices and fry for 2 minutes…
  • Add your ginger and garlic and fry for another 2 minutes…
  • Add your lentils, stock, coconut milk, tomatoes and ketchup and cook on medium/low for 30 minutes or until lentils are cooked to your liking…
  • Add juice of half a lime, coriander and season to perfection…
  • Serve with what you like most and enjoy
