- 2 garlic cloves, finely sliced

- 2 tbsp balsamic vinegar
- Squeeze of tomato ketchup

Method…
- Put a sauce pan on a medium to low heat then add you oil followed by the onion. You want it to cook for 5 or so minutes until starting to take colour…
- Add your garlic for a couple of minutes, then add your tinned tomatoes, vinegar, ketchup and a good sprinkle of salt and pepper…
- Break up the tomatoes with a wooden spoon, give it a good stir and let blip away for 15-20 mins…
- Tear in the basil leaves and give it another good stir…
- Serve over cooked pasta and cover with as much cheese as you like…

- Add olives or chillies to the tomato sauce…
- Fry off some chorizo, pepperoni or bacon at the start for a meaty, smoky kick…
