If I were to die tomorrow, I think, if anything, that my reputation for making good guacamole would live on. I don’t like to brag, but I can make a pretty good batch.
I remember guacamole, back in the day, served in a tub from the local supermarket, before I even knew that it could be made by just going to a different isle. The stuff in the tubs, I loved that to…at the time. Its only now you realise what a completely different product it actually is…guacamole, in the broadest sense of the word. The stuff in the tubs is avacaado flavoured cream. Real guacamole is a lovely ripe avacado, ideally squeezable straight from the skin, cut through with crunchy raw onion, maybe a half a diced tomato, a dash of fresh chilli, some coriander…my favourite bit as i love herbs!…and a good squeeze of lime to bring it all together…
Saying that, guacamole, in my opinion, is completely personal preference. You can almost take a ripe avacado, smash it up, and add what you like to it. I have used guacamole as a use ups salad draw recipe before with bits of carrot and chicory in. Changing up the coriander for basil or mint is a tasty adjustment.
I often pair my guacamole with my salsa and some good oven bakes tortillas for a tasty, healthy snack!
As a strict rule when making guacamole, you need perfectly ripe avocados. It is almost impossible to make a good guacamole without smooth, creamy avocado which can be squeezed from its skin. You can of course use any avocado you can get your hands on, but I find if you leave them next to a bananna for a couple of days they will ripen no problem.
if your pressed for time just smash up the avacado in a bowl, cut some spring onion with scissors and squeeze half a lime on…

Ingredients…
- 1 ripe avacado
- 1/2 a ripe tomato
- 1/4 onion
- a handful of coriander
- 1/2 a fresh chilli
- 1 lime
- salt and pepper
Method…
- I chop the onions, tomato, chilli and coriander into small dice and place in a bowl. (Especially the onion – you don’t want big chunks!)…
- I then squeeze out my guacamole onto a board and smash up a bit, then season and add the lime and give it another little mix…
- I then add the bowl ingredients to the avacado and bring together…
- Serve back in the bowl with tortilla chips or in a burito! 🙂
