Tiramisu is my favourite desert ever! The perfect combination of sugar, cream cheese and coffee…you don’t get better than that! Give it a try…it’s delicious!
This recipe does contain raw egg so do only make if you are comfortable doing so. Iv never had any issues personally, just make sure you buy your eggs as fresh as you can and with the red lion logo.

Ingredients…
- 4 eggs
- 100g caster sugar
- 500g mascarpone cheese
- 300ml espresso
- 1 pack Savoiardi biscuits or roughly 30 biscuits
- Unsweetened Cocoa powder

Method…
- Separate your eggs – whites in one bowl and yolks in another…
- Pour your coffee into a shallow dish and leave to cool…
- Whisk your whites to stiff peaks and set aside…
- Add your sugar to your yolks and whisk until pale and increased slightly in volume…
- Mix in your mascarpone bit by bit until fully combined. Don’t over whisk at this stage…
- Fold your egg whites slowly into your egg yolk mixture being careful not to loose too much air…
- Now dip and soak enough of your Savoiardi biscuits into your coffee and arrange on the bottom layer of your dish…
- Cover you biscuits with a good layer of your cheese mixture and then top with a good dusting of cocoa powder…
- Depending on your presentation dish continue with this layer order, finishing with a layer of cheese and cocoa powder…
- Chill overnight, give it a final dusting of cocoa powder and serve as you wish…

Tips and Tricks…
Depending on your dish shape and size, you can have fun with the amount of layers you can create!
I always make tiramisu without alcohol as the kids will have a bite.
If you want to add alcohol, 2 tbsp of rum or masala wine will be a lovely addition!
If you can, make the day before and chill overnight. It will be so much better!
I will reiterate!…dont over mix or whisk the mascarpone into your egg yolk mixture…if you’ve over mixed it will split and become watery!
