- 1 onion finely diced
- 1 garlic clove crushed
- 2 tbsp plain flour
- 1L stock
- 1 bay leaf
- 100ml of single cream or milk

- In a dry pan cook the mushrooms until you achieve colour…
- Meanwhile, in a separate pan, cook the onions and garlic for around 10 minutes in a touch of olive oil and butter…
- Add the mushrooms to the onion mixture and then stir in the flour to combine…
- Add the stock and the bay leaf, give it a good stir and bring to the boil…
- Simmer for 5 to 10 mins…
- Remove from the heat, discard the bay leaf and blitz with a hand blender…
- Add milk or cream and season!…
