We love everything to do with mushrooms! You can’t beat a classic mushroom soup and the small addition of dry frying the mushrooms until you achieve a more concentrated, nutty flavour really makes all the difference! So easy, cheap and tasty! Give it a try…

Ingredients…

  • 500g mushrooms roughly chopped
  • Olive oil/butter
  • 1 onion finely diced
  • 1 garlic clove crushed
  • 2 tbsp plain flour
  • 1L stock
  • 1 bay leaf
  • 100ml of single cream or milk

Method…

  • In a dry pan cook the mushrooms until you achieve colour…
  • Meanwhile, in a separate pan, cook the onions and garlic for around 10 minutes in a touch of olive oil and butter…
  • Add the mushrooms to the onion mixture and then stir in the flour to combine…
  • Add the stock and the bay leaf, give it a good stir and bring to the boil…
  • Simmer for 5 to 10 mins…
  • Remove from the heat, discard the bay leaf and blitz with a hand blender…
  • Add milk or cream and season!…
