Sausage and Baked Bean Pie

A classic combo! This recipe is a great mid week meal idea. You cant go wrong…give it a go!

Ingredients…

  • 6-8 pork sausages
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 can baked beans
  • 3 tablespoons BBQ sauce (adjust to taste)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and diced
  • 2 tablespoons butter
  • 100ml milk
  • 100g Cheddar Cheese

Method…

  1. Preheat your oven to 375°F or 190°C.
  2. In a pan, brown the sausages over medium heat until cooked through. Remove and slice them into bite-sized pieces.
  3. In the same pan, sauté the chopped onion and garlic until softened.
  4. Add the sliced sausages back to the pan, then stir in the baked beans, BBQ sauce, smoked paprika, salt, and pepper. Let it simmer for 5-7 minutes until the flavors meld together.
  5. While the sausage and bean mixture is simmering, boil the diced potatoes until tender. Drain and mash them with butter and milk until smooth. Season with salt and pepper to taste.
  6. Transfer the sausage and bean mixture into a pie dish, spreading it evenly. Sprinkle over the cheese and then top it with the mashed potatoes, creating a rustic pattern with a fork.
  7. Bake in the preheated oven for about 20-25 minutes or until the mashed potatoes are golden brown.

Tips and Tricks…

  • To make this recipe vegetarian, use some vege sausage in place of the meat ones. You wont get the fat out of them to fry the onion so you may need a but more oil.
