In the spirit of cheap and simple recipes this is super tasty recipe making the most of the store cupboard!

Ingredients…
- 1 tbsp olive oil
- 2 onions, sliced
- 1 pepper, sliced
- 2 chicken breasts, cut into 1cm slices
- 1 tsp smoked paprika
- 1/2 tsp chilli powder
- 1/2 tsp ground cumin
- 400g tin black beans, drained
- 1 tin of plum tomatoes
- Large squeeze of ketchup
- 1 garlic clove, peeled
- 1 tsp oregano
- 6 flour tortillas
- 60g cheese

Method…
- Put a large frying pan on a medium heat…
- Add your oil and then the onion and peppers for about 5 minutes…
- Add your chicken and continue to fry off for 5 minutes…
- Add your paprika, chilli powder and cumin, stir to coat and then tip in your black beans…
- Add a splash of water, season up and cook off for a couple of minutes…
- To make your tomato sauce put your plum tomatoes, ketchup, garlic, oregano and a good sprinkle of salt and pepper into a jug and blend up with a hand blender until smooth…
- Divide the chicken mixture between the tortillas, then fold the sides in and roll them up…
- Pour half of your tomato sauce into a large baking dish, position your enchiladas next to each other in the dish, then dot the rest of the sauce on and all the grated cheese…
- Bake at 200C/180C fan/gas 6 for 25-30 mins until golden brown…

Additions and substitutions…
- Try and other different meat or bean. You could include beef or lamb and try chickpea, borlotti beans or a can of baked beans.
- Try a selection of roast veg instead of meat for a vegetarian dish. Veges including squash, broccoli, cauliflower, celeriac, carrot, pepper and onion could all be used. See whats in season.
- Try a cheaper cut of meat like chicken thigh for a lower cost dish.
- Add some soft herbs to your tomato sauce. Anything like basil, coriander, fresh oregano would be delicious.
- Serving it with anything like guacamole, sour cream or fresh salsa is delicious!
- Try different cheeses spread over the top…
- Jalapenos grilled ontop are lovely!
