  • 4 thick slices of brioche or farmhouse bread
  • 2 large eggs
  • 120 ml whole milk or 60ml double cream + 60ml milk for extra richness
  • 1 tbsp sugar or maple syrup
  • 1 tsp vanilla extract
  • ½ tsp cinnamon optional
  • Pinch of salt
  • 1 tbsp butter + 1 tsp oil for frying

Method
 

  1. In a shallow bowl or dish, whisk together the eggs, milk (or cream and milk), sugar or maple syrup, vanilla extract, cinnamon (if using), and a pinch of salt.
  2. Dip each slice of bread into the mixture, letting it soak for about 15–20 seconds per side. Make sure it’s well-coated but not soggy.
  3. Heat the butter and oil in a large non-stick frying pan over medium heat.
  4. Once the butter is foaming, place the soaked bread slices into the pan.
  5. Cook for 2–3 minutes on each side, or until golden brown and cooked through.
  6. Serve warm with your favourite toppings – maple syrup, berries, powdered sugar, or a dollop of yoghurt.

Notes

Notes:
Brioche works best for a rich and custardy result, but farmhouse bread is a great everyday option.
For a crispier finish, sprinkle a little sugar on each side of the bread before frying.
Double the batch for a crowd – this recipe scales easily.
