Recipe Title: Oreo Pancakes with Whipped Cream Topping

  • For the Pancakes:
  • 200 g plain flour
  • 30 g cocoa powder
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp sugar
  • 250 ml milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp melted butter plus extra for cooking
  • 8 Oreos crushed
For the Toppings:
  • 200 ml double cream
  • 1 tbsp icing sugar
  • 4 Oreos crushed (for garnish)
  • Chocolate sauce optional

Method
 

Instructions:
  1. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, salt, and sugar.
  2. In a separate bowl, mix the milk, egg, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the crushed Oreos.
  5. Heat a non-stick frying pan over medium heat and add a little butter.
  6. Pour spoonfuls of the batter into the pan and cook for 2–3 minutes on each side, or until bubbles appear and edges look set. Flip and cook for another 1–2 minutes.
  7. While the pancakes cook, whisk the double cream and icing sugar together until soft peaks form.
  8. Stack the pancakes, spoon over the whipped cream, and sprinkle with crushed Oreos.
  9. Drizzle with chocolate sauce if using, and serve immediately.

Notes

Notes:
For a lighter texture, don’t overmix the batter. These pancakes are rich, so a smaller stack goes a long way! Perfect served with a glass of cold milk or hot coffee.
